This no bake strawberry champagne cheesecake trifle is so easy to make! It would be perfect for a New Years party, or remove the champagne and make them all year.
Place strawberries in a bowl, pour the champagne over them and cover in the refrigerator for 24 hours so that the strawberries absorb the champagne.
For the crust
Crush the graham crackers in a food processor until they are fine and without chunks.
In the food processor, add in the melted butter and sugar and mix until well combined.
For the cream cheese filling
In a mixing bowl fitted with the whisk attachment, whip the heavy cream on high speed until it turns from liquid to a whipped cream that forms small peaks.
In a separate medium sized bowl, beat the cream cheese, vanilla and sugar until well combined and smooth.
Fold the heavy cream mixture that you created into the cream cheese mixture until combined.
Fill a piping bag with the cream cheese mixture for assembly.
To assemble
I used small champagne flutes, but any stemmed glass will work. A white wine glass would work well too. Make sure you have a spoon that will work for serving if you are using narrow glassware.
Start by filling each glass about 1/6th of the way full with the graham cracker mixture.
Next you will fill another 1/6th of the glass with the cream cheese mixture with your piping bag.
Then add the champagne strawberries to bring your glass to half full.
Repeat those steps one more time to bring the layers to the top of each glass.
Top off with the cream cheese mixture and some graham cracker crumbs.
Notes
Simply remove the champagne if you want a simple strawberry cream cheese dessert!
