Strawberry Champagne Cheesecake Trifles

Strawberry Champagne Cheesecake Trifles

This no bake strawberry champagne cheesecake trifle is so easy to make! It would be perfect for a New Years party, or remove the champagne and make them all year.

Ingredients
  

For the crust

  • 14 full graham crackers
  • 10 tbsp salted butter melted
  • 4 tbsp light brown sugar

For the cream cheese filling

  • 16 oz full fat cream cheese softened
  • 1 cup confectioners sugar
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream

For the champagne strawberries

  • 24 oz fresh strawberries washed & sliced thin
  • 1 bottle champagne

Instructions
 

For the champagne strawberries

  • Wash and thinly slice the strawberries.
  • Place strawberries in a bowl, pour the champagne over them and cover in the refrigerator for 24 hours so that the strawberries absorb the champagne.

For the crust

  • Crush the graham crackers in a food processor until they are fine and without chunks.
  • In the food processor, add in the melted butter and sugar and mix until well combined.

For the cream cheese filling

  • In a mixing bowl fitted with the whisk attachment, whip the heavy cream on high speed until it turns from liquid to a whipped cream that forms small peaks.
  • In a separate medium sized bowl, beat the cream cheese, vanilla and sugar until well combined and smooth.
  • Fold the heavy cream mixture that you created into the cream cheese mixture until combined.
  • Fill a piping bag with the cream cheese mixture for assembly.

To assemble

  • I used small champagne flutes, but any stemmed glass will work. A white wine glass would work well too. Make sure you have a spoon that will work for serving if you are using narrow glassware.
  • Start by filling each glass about 1/6th of the way full with the graham cracker mixture.
  • Next you will fill another 1/6th of the glass with the cream cheese mixture with your piping bag.
  • Then add the champagne strawberries to bring your glass to half full.
  • Repeat those steps one more time to bring the layers to the top of each glass.
  • Top off with the cream cheese mixture and some graham cracker crumbs.

Notes

Simply remove the champagne if you want a simple strawberry cream cheese dessert!
